Virgilio Mejia Membreno is the owner of Las Colmenas, a 3 hectare farm at 1300masl in the Rio Colorado area of San Pedro, Copan. Virgilio has owned the farm for 7 years and whilst his production consistes of mostly Caturra, he has recently been experimenting with planting new varieties such as Catuai, Lempira and IHCAFE90.

The mmaceration process is originally a wine making technique. Cherries are cleaned and floated, then placed in tanks and sealed. They're left there to macerate for a given period of time, which for these naturals was between 24 and 36 hours. After that they're placed straight onto raised beds and dried. It's essentially a pre-fermentation that is very slow and controlled, because it occurs in a completely anaerobic environment. It has been noticed that this process adds a real juiciness and extra lactic and malic acidity to the resulting coffees.
