At an altitude of 1,450 to 1,500 meters above sea level, Finca Santa Mónica is located in Armenia, Quindío and is managed by renowned producer Jairo Arcila. This micro-lot of 100% Pink Bourbon was harvested with strict ripeness selection, then floated and hand-sorted to remove defects. The cherries underwent a 30-hour underwater fermentation before being pulped, gently washed, and dried under temperature-controlled conditions
