Meet the coffee with a remarkable journey. Transported from its origin by sailboat, the Ide Min. What was supposed to be a four-month round trip turned into a seven-month voyage, all in the name of sustainability. The result? A zero-carbon footprint compared to traditional container ships.
The cherries are grown on a farm situated near Armenia in the Quindio region at 1450 – 1500 masl and undergo 30 hours of underwater fermentation prior to being pulped. After this process, the parchment is carefully washed and dried under temperature-controlled conditions until the optimal moisture content is reached.
This results in tasting notes of rich chocolate, caramel sweetness and a green apple acidity.
