William Manchay owns La Flor de la Palma, a 3ha farm in Chirinos, Cajamarca. The farm grows caturra and geisha varieties, with a shift towards geisha due to its profitability and climate adaptability. William aims to win a national coffee competition, having previously placed 2nd and 3rd locally.
This washed coffee is fermented in ceramic tanks for 36 hours. The coffee is then sun-dried on raised beds and further dried in a greenhouse for about 20 days.
This bright coffee has a delicate tea-like quality with jasmine notes and a honey sweetness.
